My Italian Favourites - A Handmade Feast 20/06/26
Imagine a table filled with silky handmade pasta, rich risotto, and golden, crisp arancini—each dish layered with flavour, a little indulgence, and just the right amount of theatre. This is Italian cooking at its most comforting and most impressive.
In this class, we’ll step into the rhythm of Italian cooking—where simple ingredients are transformed into something truly special. You’ll learn techniques that feel effortless once you know them, and dishes that are guaranteed to impress.
We’ll begin with delicate, handmade herb-veneered smoked salmon ravioli, served with a creamy lemon sauce that’s bright, rich, and perfectly balanced. (I picture making this if Maggie Beer was to visit! )
Next, we’ll create vibrant beetroot tagliatelle, naturally coloured and paired with goats cheese and toasted walnuts—earthy, creamy, and full of texture.
Then, it’s time for risotto. You’ll learn how to master a beautifully flowing pear and blue cheese risotto, with that perfect, gentle ooze Italians call all’onda.
And for something a little unexpected (and completely irresistible), we’ll finish with my own creation—cinnamon and apple arancini, crisp on the outside, soft and fragrant within, served with a luscious butterscotch sauce.
This class is for the true food lovers—those who appreciate great technique, simple ingredients, and the joy of sharing something delicious around the table.

The Post and Rail
The Post and Rail is a Cooking and Art School, cafe and providore is now located at 58 Riddoch Street Penola Penola is 30mins drive from Mount Gambier and the Cobb & Co building is a heritage listed building in the centre of Penola, across the road from St Mary McKillop school and one door down from Pipers of Penola. Please arrive 10 minutes early to allow for introductions and getting started on the coffees.
Every guest in our kitchen receives a warm welcome, morning tea or proper coffee upon arrival, and their own apron to wear for the duration of the class. All equipment and ingredients are provided, and a copy of the recipes used during the class are emailed to guests so that they can be recreated at home.
