Join me for An Indian Feast, a hands-on cooking class where we’ll explore how to build those incredible layers of flavour that make Indian food so irresistible. And if you’re worried about the heat, don’t be — great Indian cooking isn’t about making food unbearably spicy. It’s about learning how spices work together to create warmth, fragrance and depth of flavour.

We’ll start with Tandoori Chicken, learning how to create that beautifully spiced marinade and gorgeous charred flavour that makes this dish such a favourite.

Next is a rich and deeply flavoured Beef Vindaloo. Vindaloo has a reputation for being fiercely hot, but that’s not what this dish is all about. Our version will have plenty of warmth without blowing your head off! Instead, we’ll concentrate on the wonderful balance of spice, garlic and tanginess that makes a really good vindaloo so delicious……but if you do like to a bit more spice, we will have options for you to do so.

Then we’re making Mutter Paneer — including making our own fresh paneer cheese from scratch. If you’ve never made cheese before, you’ll be amazed at just how simple it can be, and there’s something pretty satisfying about sitting down to a curry knowing you made the cheese in it yourself!

Of course, an Indian feast needs all the extras, so we’ll also make Garlic Naan, a cooling Raita, beautifully fragrant Basmati Rice and a refreshing Mango Lassi.

Along the way, I’ll share plenty of tips for working with spices, building flavour and understanding how to create Indian food with confidence at home.

Then comes the best part — we’ll sit down together and enjoy the incredible feast we’ve created.

The Post and Rail is a Cooking and Art School, cafe and providore is now located at 58 Riddoch Street Penola  Penola is 30mins drive from Mount Gambier and the Cobb & Co building is a heritage listed building in the centre of Penola, across the road from St Mary McKillop school.

Please arrive 10 minutes early to allow for introductions and getting started on the coffees.

Every guest in our kitchen receives a warm welcome , morning tea and proper coffee and their own apron to wear for the duration of the class.  All equipment and ingredients are provided, and a copy of the recipes used during the class are emailed to guests so that they can be recreated at home.
