I’ll get the fire pit and the smoker cranking for this class.

To start our epic feast, we’re going to make Smokey Glazed Beef Ribs that will all but fall off the bone.

We’re also going to make Buffalo Chicken Wings in the smoker, and I’ve got a perfect spice rub that I can’t wait to share with you.

My method for making Pulled Pork that shreds so easily and cooks so quickly is going to be a winner in this class as well.

As if that’s not enough, we’re going to make our own buns from scratch for this class that we will cook in a camp oven and a zingy slaw to go with the pulled pork.

Just in case you’re feeling indulgent, we are going to make Golden Syrup dumplings in a camp oven over a fire to really put us in a food coma.

I cannot wait to share these methods and cook with you on the day. It’s hands on, immersive and the best part of the day is the end when we all sit down together and devour our epic feast!

The Post and Rail

The Post and Rail is a Cooking and Art School, cafe and providore is now located at 58 Riddoch Street Penola  Penola is 30mins drive from Mount Gambier and the Cobb & Co building is a heritage listed building in the centre of Penola, across the road from St Mary McKillop school and one door down from Pipers of Penola. Please arrive 10 minutes early to allow for introductions and getting started on the coffees.

Every guest in our kitchen receives a warm welcome, morning tea or proper coffee upon arrival, and their own apron to wear for the duration of the class.  All equipment and ingredients are provided, and a copy of the recipes used during the class are emailed to guests so that they can be recreated at home.
