A Christmas Feast

Christmas entertaining should feel generous and joyful—not like you’ve spent the entire day trapped in the kitchen while everyone else is having fun. 

Held just before Christmas, this class would make a wonderfully different end-of-year get-together. Gather your workmates, bring a group of friends or book individually and join a table of people ready to cook, laugh and feast together.

In this hands-on class, we’ll create a magnificent Christmas feast filled with recipes that look impressive on the table but can be prepared with confidence at home.

We’ll begin with one of my favourite showstoppers: crispy coconut prawns served with lime aioli. It’s a brilliant nibble or entrée for an Australian Christmas and always disappears quickly.

For the main event, we’ll make golden turkey en croûte filled with brie and cranberries, accompanied by buttery Duchess potatoes, maple and Dijon roasted carrots, and green beans with toasted almonds and lemon.  These can all be made in advance and baked just before lunch.

We’ll finish with a proper Christmas trifle layered with sponge, berries, vanilla custard, cream and a little sherry. There will also be homemade eggnog with a hint of nutmeg—because if we’re creating an epic Christmas feast, we may as well do it properly.

Once everything is ready, we’ll load the table and enjoy the feast together.

The Post & Rail is an immersive cooking, gardening and art school located at 58 Riddoch Street in the heart of Penola, just a stone’s throw from historic Petticoat Lane and the Mary MacKillop Penola Centre. Please arrive approximately 10 minutes before the advertised starting time so you can settle in, meet the group and be ready to begin. Allow approximately 30–35 minutes’ travel from either Mount Gambier or Naracoorte.
