A special event as part of the Re-A-Range Festival celebrating creativity, place and community across the Limestone Coast.

This class is going to be something truly special.

Long before it was a place to gather, cook and create, the old Cobb & Co building in Penola was a working space for making fresh cheese and butter. These walls were built for it. I’ve been quietly waiting for the right moment to bring that history back to life — milk, warmth, time, and a little bit of magic.

That moment is here, and I’d love you to join me.

And as part of the Re-A-Range Festival, celebrating creativity, place and community across the Limestone Coast, it feels like the perfect moment to do just that.

In this intimate, hands-on class we’ll learn how to make a collection of beautiful fresh cheeses you can easily recreate at home. But this isn’t just a class — it’s an experience. Together we’ll cook, taste, laugh, and turn what we make into a generous feast to share.

We’ll start by making ricotta from scratch, which becomes the filling for crisp spinach and ricotta filo pastries. We’ll churn butter (yes, real butter!) and turn it into flavour-packed compound butters like Cowboy Butter and Vegemite Butter — absolute crowd-pleasers.

Our labneh will be finished with herbs and good olive oil, looking as beautiful as it tastes. And of course, we’ll bake a fresh loaf of bread together — the perfect canvas for all that glorious butter.

Finally, we’ll transform a silky homemade cream cheese into dessert: a classic baked cheesecake.

As the table fills, we’ll sit down together and enjoy it all — food made by hand, shared in a place where it was always meant to happen.

About The Post and Rail Headquarters @ Cobb & Co Penola

The Post and Rail Cooking and Art School, café and providore is located at 58 Riddoch Street, Penola. Penola is a 30-minute drive from Mount Gambier, and the historic Cobb & Co building sits in the heart of town, across the road from St Mary MacKillop School and just one door down from Pipers of Penola.

Please arrive 10 minutes early to allow time for introductions and getting started on the coffees.

Every guest in our kitchen receives a warm welcome, morning tea or proper coffee on arrival, and their own apron to wear during the class. All ingredients and equipment are provided, and a copy of the recipes used in the class will be emailed to you so you can recreate them at home.
