Imagine the crackle of firewood, the warmth of the flames, and lifting the lid on a camp oven to reveal something rich, bubbling, and deeply satisfying. This is cooking at its most grounding—simple ingredients, bold flavours, and food made to be shared.

In this 4-hour, hands-on class, we’ll prepare and create an epic feast, all cooked over the open fire.

Together, we’ll make:

  • Braised Lamb with Rosemary and Ale, slow-cooked until meltingly tender, served with seasonal vegetables

  • A crusty loaf of bread, perfect for soaking up every last drop of those incredible juices

  • Chilli Beef topped with Cheddar Cornbread and herbs, hearty, warming, and full of flavour

And because this is everyone’s favourite and so easy over the flames…….

  • Golden Syrup Dumplings, cooked over the fire and guaranteed to be a crowd favourite

We’ll also prepare a warming mulled shiraz, from my families vineyard to our table, to sip as we cook, adding to the atmosphere and experience of the day.

The Post and Rail is a Cooking and Art School, cafe and providore is now located at 58 Riddoch Street Penola  Penola is 30mins drive from Mount Gambier and the Cobb & Co building is a heritage listed building in the centre of Penola, across the road from St Mary McKillop school and one door down from Pipers of Penola. Please arrive 10 minutes early to allow for introductions and getting started on the coffees.

Every guest in our kitchen receives a warm welcome, morning tea or proper coffee upon arrival, and their own apron to wear for the duration of the class.  All equipment and ingredients are provided, and a copy of the recipes used during the class are emailed to guests so that they can be recreated at home.

Our first hero dish will be a Beetroot Pasta Tagliatelle with Walnuts, Burnished Mushroom and Creamy Fetta crumbled on top.

The next dish is Smoked Trout Ravioli. We veneer herbs into the pasta to create a visually beautiful pasta sheet, before we stuff the little pillows with a delicious Smoked Trout and Cream Cheese Filling. It’s served with a Creamy Lemon Caper Sauce.

Finally, we are going to make the fluffiest and most delicious Gnocchi from scratch.

This class is hands on fun and a joy to share. Best of all, we sit down together at the end of the day and enjoy our creations.
