A Mexican Feast Fiesta - 10/12/26
An Authentic Mexican Feast
Mexican food isn’t simply about heat—it’s the combination of smoky spices, fresh lime, charred corn, creamy sauces and bright, zingy flavours that makes it so delicious.
Held on a Thursday evening mid December, this class would make a wonderfully different end-of-year get-together. Gather your workmates, bring a group of friends or book individually and join a table of people ready to cook, laugh and feast together.
We’ll press and cook our own corn tortillas, fill them with richly flavoured chicken in adobo sauce and top them with fresh pico de gallo.
We’ll also make golden beef empanadas, creamy and charred Mexican street corn, and freshly cooked churros dipped into thick Mexican hot chocolate.
Once everything is ready, we’ll load the table with our colourful creations and enjoy the feast together.

Creamy, charred Mexican street corn (Elote)—the surprise favourite from my last class

The Post & Rail is an immersive cooking, gardening and art school located at 58 Riddoch Street in the heart of Penola, just a stone’s throw from historic Petticoat Lane and the Mary MacKillop Penola Centre. We are also on the doorstep of the renowned Coonawarra wine region, home to an exceptional collection of cellar doors and wineries.
Set within the beautiful heritage-listed former Cobb & Co building, our classes are relaxed, welcoming and hands-on. Whether you are a complete beginner or have some experience, you’ll be encouraged and made to feel at home.
Please arrive approximately 10 minutes before the advertised starting time so you can settle in, meet the group and be ready to begin. Allow approximately 30–35 minutes’ travel from either Mount Gambier or Naracoorte.
