Dinner for one in a rice cooker. Easy one pot meal.

ok, oopsies, it made enough for 2 meals!

This is such a quick and easy recipe. One that I’ve demonstrated a lot for seniors gatherings, or anytime someone wants to hear quick and easy and budget friendly. I find it such a good “recipe” for using up fridge vegetables so feel free to swap in broccoli, or cauliflower or other things that need using up in your fridge.

Here’s the recipe.

½ cup of basmati rice

1 heaped teaspoon of curry powder

1 chicken thigh, diced

1 carrot, sliced

½ cup of frozen peas

1 cobb of corn, shucked

enough water to cover the washed rice by 1 inch or 2 ½ cm of cold water.

Method:

-Wash the rice until water runs clear, then top with enough water to come 1 inch above the top of the rice.

-add the curry powder, sliced carrot, peas and corn and then also add the cubed chicken thighs (could be breast)

-put the lid on the rice cooker pot and click the button onto cook.

-Wait until the rice cooker has finished its cycle (20-25mins) and then it’s ready.

-your rice cooker will just keep it on warm until you come and get it so it’s pretty cruisy on the timing.

-Season to taste ( I needed a pinch of salt on mine)
